In 2024, Pearse Lyons Distillery achieved a significant milestone in its sustainability journey by improving its raw material conversion rate from 4.174 kg/LPA in 2023 to 4.054 kg/LPA. This exceeded the company’s milestone target by 3.1%, reflecting a strong commitment to reducing food waste through process efficiency.

To support this progress, the distillery implemented five targeted initiatives throughout the year. These included a comprehensive review of production processes to identify opportunities for improvement, with a focus on reducing material losses and enhancing overall efficiency. Each initiative was designed to deliver measurable outcomes while supporting long-term environmental goals.

The company also acknowledged the role of natural variability in its raw materials. The organic nature of the grain substrate used in whiskey production can marginally impact conversion rates. Despite this, Pearse Lyons Distillery has continued to refine its operations to accommodate these fluctuations, demonstrating resilience and adaptability in its sustainability practices.

Food waste has been identified as the distillery’s primary waste target, with the raw material conversion rate serving as a key performance indicator.
